Description

A rich and creamy salmon dish, perfect for impressing someone special, ideal for romantic dinners or elevating weeknight meals.


Ingredients

  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup unsalted chicken stock
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Mix together the dried basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and black pepper in a small bowl. Set aside half of this mix to season the sauce later.
  2. Rub the remaining seasoning mix thoroughly onto both sides of the salmon fillets.
  3. Heat olive oil in a large skillet over medium-high heat. Once hot, add the salmon, flesh side down. Sear for about 5 minutes on each side, or until golden brown. Remove from the pan and set aside.
  4. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Sautรฉ over low heat for 1-2 minutes.
  5. Pour in the chicken stock while scraping the pan to lift any browned bits.
  6. Stir in the heavy cream, parmesan cheese, and the reserved seasoning mix. Combine everything well.
  7. Increase the heat to medium-low and let the sauce simmer for 10-15 minutes until it thickens to your liking. Taste and adjust seasoning if necessary.
  8. Return the salmon to the skillet, spoon the sauce over the top, and cook for an additional 3-5 minutes.
  9. Serve immediately, garnished with fresh basil.

Notes

Serve over rice or with mashed potatoes to soak up the sauce. Store leftovers in an airtight container for up to 2 days.
