Description

A delicious one-pan meal featuring golden chicken breasts, creamy sun-dried tomato sauce, and tender tortellini, perfect for impressing loved ones.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 12 oz tortellini (fresh or frozen)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Season the chicken breasts generously with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until they are golden brown and fully cooked. Remove the chicken and set it aside.
  3. In the same skillet, add the sun-dried tomatoes and pour in the heavy cream. Stir well and bring to a gentle simmer.
  4. Gradually mix in the grated parmesan cheese, stirring until it melts into a creamy sauce that slightly thickens.
  5. Meanwhile, bring a pot of salted water to a boil and cook the tortellini according to the package instructions. Drain and set aside.
  6. Add the drained tortellini to the creamy sauce, stirring until they’re thoroughly coated.
  7. Slice the cooked chicken and return it to the skillet, nestling it amidst the cheesy sauce and tortellini.
  8. Serve warm, garnished with fresh basil leaves for a pop of color and flavor.

Notes

For a different flavor profile, swap sun-dried tomatoes for roasted red peppers or use whole wheat tortellini for a healthier option.
