Description
A delicious one-pan meal featuring golden chicken breasts, creamy sun-dried tomato sauce, and tender tortellini, perfect for impressing loved ones.
Ingredients
Scale
- 2 chicken breasts
- 1 cup sun-dried tomatoes
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 12 oz tortellini (fresh or frozen)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Season the chicken breasts generously with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until they are golden brown and fully cooked. Remove the chicken and set it aside.
- In the same skillet, add the sun-dried tomatoes and pour in the heavy cream. Stir well and bring to a gentle simmer.
- Gradually mix in the grated parmesan cheese, stirring until it melts into a creamy sauce that slightly thickens.
- Meanwhile, bring a pot of salted water to a boil and cook the tortellini according to the package instructions. Drain and set aside.
- Add the drained tortellini to the creamy sauce, stirring until they’re thoroughly coated.
- Slice the cooked chicken and return it to the skillet, nestling it amidst the cheesy sauce and tortellini.
- Serve warm, garnished with fresh basil leaves for a pop of color and flavor.
Notes
For a different flavor profile, swap sun-dried tomatoes for roasted red peppers or use whole wheat tortellini for a healthier option.
