Ingredients

  • 1 cup vegetable broth

  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sautรฉ until it turns translucent, about 5 minutes.
  3. Stir in the minced garlic and let it cook for another minute until fragrant.
  4. Toss in the butter beans along with the vegetable broth, dried rosemary, thyme, salt, and pepper.
  5. Allow the mixture to cook for 10 minutes so the flavors meld beautifully.
  6. Serve hot, garnished with fresh parsley.
