Description

Ingredients

  • โ…” cup whole milk, lukewarm (160ml)
  • ยผ cup white granulated sugar (50g / 1.8 oz)
  • 2 ยฝ teaspoons instant yeast or active dry yeast
  • 3 ยพ cups bread flour (490g / 17.3 oz)
  • ยผ cup milk powder (25g / 1 oz)
  • ยผ cup vegetable oil (60ml)
  • ยผ cup honey (60ml)
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 2 large eggs
  • ยฝ teaspoon salt
  • 1 egg yolk mixed with 1 teaspoon of milk (for egg wash)
  • 1 ยฝ cups heavy whipping cream (375ml)
  • 1 teaspoon vanilla bean paste
  • 2 tablespoons caster sugar (about 8 tsp)
  • Icing sugar (for dusting)

Instructions

  1. Make the Tangzhong (the starter) by whisking together water and โ…“ cup of bread flour in a small saucepan over low heat until thick, then cool.
  2. Bloom the yeast by combining lukewarm milk, yeast, and sugar in a bowl and letting it sit for 5 minutes.
  3. Add the remaining dough ingredients to the yeast mixture, folding in the tangzhong.
  4. Knead the dough using a dough hook for about 8 minutes until sticky but combined.
  5. Lightly oil a bowl, place the dough inside, cover, and let it rise for 1 hour until doubled in size.
  6. Punch the dough down, divide into 12 equal pieces, and roll into balls.
  7. Place shaped buns on a baking sheet and allow to rise for another 30-60 minutes.
  8. Preheat oven to 180ยฐC (350ยฐF), brush the buns with egg wash, and bake for 18-20 minutes until golden brown.
  9. Beat heavy cream, vanilla bean paste, and caster sugar until stiff peaks form.
  10. Slice each bun to create a pocket, fill with whipped cream, and dust with icing sugar before serving.
