A refreshing and nutritious tropical chia pudding made with mango and dragon fruit, perfect for breakfast or a healthy snack.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 1 ripe mango, diced
  • 1/2 cup dragon fruit, diced
  • 12 tablespoons maple syrup (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Combine chia seeds and coconut milk in a mixing bowl. Add maple syrup and vanilla extract if desired, and stir well.
  2. Allow the mixture to sit for 5-10 minutes and stir again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens.
  4. Spoon it into serving bowls or jars.
  5. Top with diced mango, dragon fruit, and your favorite toppings.
  6. Serve immediately and enjoy!

Notes

For alternative flavors, substitute coconut milk with almond or oat milk. You can also use different fruits like kiwi or berries.
