Description

These Mango Butter Bars encapsulate the essence of summer with a buttery, rich base and sweet, tangy mango flavor.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup fresh mango, diced
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish well.
  2. Combine the melted butter, granulated sugar, and vanilla extract in a large mixing bowl. Stir until fully integrated.
  3. Gradually add the all-purpose flour, salt, and baking powder. Mix until the ingredients come together—it’s okay if a few lumps remain!
  4. Fold in the diced mango, being careful not to crush the fruit.
  5. Pour the mixture into the greased baking dish, spreading it evenly across the surface.
  6. Place in the preheated oven and bake for 25-30 minutes, or until the top turns golden brown and is set.
  7. Allow the bars to cool completely before cutting them into squares.

Notes

Serve with vanilla ice cream or whipped cream for a delightful treat. Store leftovers in an airtight container.
