- 1 cup Arborio rice
- 4 cups lobster broth
- 1 cup cooked lobster meat, chopped
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- Heat the lobster broth in a saucepan and keep it at a gentle simmer.
- Warm the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sautรฉ until translucent.
- Stir in the Arborio rice and toast for 1-2 minutes, stirring frequently.
- Add the warm lobster broth, one ladle at a time, stirring frequently to absorb the broth.
- Continue adding broth for about 18-20 minutes, until the rice is creamy and al dente.
- Mix in the cooked lobster meat, heavy cream, and Parmesan cheese. Season with salt and pepper to taste.
- Remove from heat and let it sit for a minute to settle.
- Serve warm, garnished with chopped chives or parsley for a pop of color.
Notes
For best results, use fresh lobster. If unavailable, frozen can be used, but the flavor will vary.
