Description

A delicious and satisfying Loaded Potato Taco Bowl featuring crispy roasted potatoes, bold taco flavors, and a variety of toppings.


Ingredients

Scale
  • 4 medium Potatoes (russet, Yukon gold, or sweet potatoes)
  • 2 tablespoons Taco seasoning
  • 2 tablespoons Olive oil
  • 1 cup Tortilla chips or Fritos
  • 1 can Black beans, drained
  • 1 cup Corn
  • 1 Avocado, sliced
  • 1 cup Shredded cheese
  • 1/2 cup Sour cream
  • 1 cup Lettuce, chopped
  • 1 cup Tomatoes, diced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dice your potatoes, then toss them with olive oil and taco seasoning.
  3. Spread the seasoned potatoes on a baking sheet and roast for 25-30 minutes.
  4. Layer the roasted potatoes in a bowl and top with black beans, corn, diced tomatoes, lettuce, cheese, and additional toppings.
  5. Sprinkle crushed tortilla chips or Fritos on top for crunch.
  6. Serve topped with avocado slices and a dollop of sour cream.

Notes

Customize the toppings to your preference. Leftovers can be stored in the refrigerator for up to 3 days.
