A delicious and satisfying Loaded Potato Taco Bowl featuring crispy roasted potatoes, bold taco flavors, and a variety of toppings.
Ingredients

- 4 medium Potatoes (russet, Yukon gold, or sweet potatoes)
- 2 tablespoons Taco seasoning
- 2 tablespoons Olive oil
- 1 cup Tortilla chips or Fritos
- 1 can Black beans, drained
- 1 cup Corn
- 1 Avocado, sliced
- 1 cup Shredded cheese
- 1/2 cup Sour cream
- 1 cup Lettuce, chopped
- 1 cup Tomatoes, diced
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dice your potatoes, then toss them with olive oil and taco seasoning.
- Spread the seasoned potatoes on a baking sheet and roast for 25-30 minutes.
- Layer the roasted potatoes in a bowl and top with black beans, corn, diced tomatoes, lettuce, cheese, and additional toppings.
- Sprinkle crushed tortilla chips or Fritos on top for crunch.
- Serve topped with avocado slices and a dollop of sour cream.
Notes
Customize the toppings to your preference. Leftovers can be stored in the refrigerator for up to 3 days.
