- 2 slices bread of choice (whole grain, sourdough, or rye)
- 1 ripe avocado
- 1 medium cucumber, thinly sliced
- ½ cup fresh leafy greens (lettuce, spinach, or arugula)
- ¼ cup cherry tomatoes, halved (optional)
- 2 tbsp red onion, thinly sliced
- 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
- 1 tsp lemon juice
- Salt and pepper to taste
- 1 tsp olive oil or your favorite sandwich spread (optional)
Instructions
- If you prefer your sandwich toasted, lightly toast your bread slices.
- In a bowl, mash the ripe avocado and mix in the lemon juice, salt, and pepper to taste.
- Spread the mashed avocado evenly over one side of each slice of bread.
- Generously layer cucumber slices on top of the avocado spread.
- Add the fresh leafy greens followed by the sliced red onions and cherry tomatoes if you’re using them.
- Sprinkle fresh herbs over the top for an added burst of flavor.
- If desired, drizzle a little olive oil or your favorite sandwich spread.
- Close the sandwich with the other bread slice, cut it in half, and serve immediately.
Notes
This sandwich is best enjoyed fresh but can be stored in an airtight container. Use extra lemon juice to prevent avocado browning.
