Description

Comforting and crispy chimichangas filled with seasoned beef, creamy cheese, and refried beans, perfect for family dinners.

Ingredients

Scale
  • 6 extra-large flour wraps (burrito style)
  • 2 tablespoons neutral oil (for frying or brushing)
  • 1 cup mashed refried pinto beans
  • 1 small yellow onion (minced finely)
  • 2 cloves garlic (pressed or finely minced)
  • 1 pound lean ground beef
  • 1ยฝ cups shredded cheddar or a Mexican-style cheese blend
  • ยฝ cup tomato-based salsa
  • 1 ounce taco seasoning mix (store-bought or homemade)

Instructions

  1. In a wide skillet set over medium heat, brown the ground beef along with the minced onion. Cook until the beef is no longer pink and the onions are soft.
  2. Drain any rendered fat from the pan. Stir in the minced garlic, taco seasoning, and salsa. Let the mixture simmer for about 3 to 4 minutes until everything is fully incorporated and thickened.
  3. To assemble the chimichangas, spoon a layer of refried beans in the center of each tortilla. Add a generous portion of the beef mixture on top, then sprinkle a handful of shredded cheese.
  4. Fold the sides inward and tightly roll each tortilla to form a secure burrito shape.
  5. For a Baked Version: Preheat your oven to 400ยฐF (200ยฐC). Arrange the chimichangas seam-side down on a baking tray and lightly coat them with oil. Bake for 18 to 20 minutes, flipping halfway through, until golden and crisp.
  6. For a Skillet Version: Warm 2 to 3 tablespoons of oil in a skillet over medium heat. Fry each chimichanga seam-side down for about 2 to 3 minutes on each side until evenly browned and crispy.
  7. Allow the chimichangas to rest for about 2 minutes after cooking. Serve warm, garnished with toppings like sour cream, chopped lettuce, guacamole, or additional salsa.

Notes

Serve with Mexican-style rice or fresh guacamole. Leftovers can be stored in the fridge for up to 3 days.
