- 4 chicken breasts
- 2 tablespoons olive oil
- 2 shallots, sliced
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Begin by heating the olive oil in a large skillet over medium heat.
- Season the chicken breasts on both sides with salt and pepper. Place them in the skillet and cook until they’re nicely browned, about 5-7 minutes per side.
- Once browned, remove the chicken from the skillet and set it aside.
- In the same skillet, toss in the sliced shallots and minced garlic. Sautรฉ until they’re softened and fragrant.
- Pour in the lemon juice, add the lemon zest, and pour in the chicken broth. Make sure to scrape the brown bits from the skillet to incorporate that flavor into your sauce.
- Return the chicken to the skillet. Cover it and let it simmer for about 15 minutes, or until the chicken is cooked through.
- Just before serving, garnish the dish with fresh parsley for a pop of color and flavor.
Notes
Consider marinating the chicken in lemon juice and herbs for enhanced flavor.
