Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter (or any preferred nut butter)
- 1/4 cup honey or maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons poppy seeds
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine the rolled oats, almond butter, honey (or maple syrup), lemon juice, lemon zest, poppy seeds, vanilla extract, and a pinch of salt in a mixing bowl.
- Mix well until the ingredients are fully combined into a sticky mixture.
- Add more rolled oats if the mixture is too sticky, or drizzle in more nut butter or honey if it seems too dry.
- Scoop the mixture and roll it into small, bite-sized balls.
- Chill the energy bites in the fridge for about 30 minutes to firm up.
- Store them in an airtight container in the fridge for up to a week.
Notes
For a vegan version, substitute honey with maple syrup. These energy bites can also be frozen for 2-3 months.
