A quick and healthy snack packed with citrus flavor, perfect for energy boosts any time of day.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond butter (or any preferred nut butter)
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons poppy seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the rolled oats, almond butter, honey (or maple syrup), lemon juice, lemon zest, poppy seeds, vanilla extract, and a pinch of salt in a mixing bowl.
  2. Mix well until the ingredients are fully combined into a sticky mixture.
  3. Add more rolled oats if the mixture is too sticky, or drizzle in more nut butter or honey if it seems too dry.
  4. Scoop the mixture and roll it into small, bite-sized balls.
  5. Chill the energy bites in the fridge for about 30 minutes to firm up.
  6. Store them in an airtight container in the fridge for up to a week.

Notes

For a vegan version, substitute honey with maple syrup. These energy bites can also be frozen for 2-3 months.
