Description

A bright and flavorful side dish that combines light couscous with tangy lemon and rich Parmesan cheese, perfect for quick weeknight dinners.

Ingredients

Scale
  • 1 cup couscous
  • 1 1/4 cups vegetable broth or water
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a saucepan, bring the vegetable broth or water to a rolling boil.
  2. Stir in the couscous along with the olive oil, then remove the pan from heat.
  3. Cover the pan and let it sit for 5 minutes to allow the couscous to absorb the liquid.
  4. After 5 minutes, fluff the couscous with a fork, and then stir in the lemon zest, lemon juice, and grated Parmesan cheese.
  5. Season your dish with salt and pepper to taste.
  6. Serve warm, garnished with a sprinkle of chopped parsley.

Notes

Feel free to swap vegetable broth with chicken broth for a non-vegetarian option, or use nutritional yeast instead of Parmesan for a dairy-free twist.
