- 1 cup powdered sugar
- 2–3 teaspoons fresh lemon juice for glaze
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg yolk, lemon zest, lemon juice, and crushed lavender, mixing until well combined.
- Gradually incorporate the all-purpose flour and salt, stirring to form a soft dough.
- Scoop portions of dough and roll them into balls, creating a thumbprint in the center of each ball with your thumb.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool completely before filling the centers with the lemon glaze.
Notes
For best results, ensure your butter is at room temperature for optimal creaming. You can also substitute lavender with an equal amount of lemon extract if desired.
