- 1 tablespoon olive oil
- 1 small onion (diced)
- 1 tablespoon minced garlic
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup pearl couscous
- 1½ cup vegetable or low-sodium chicken broth
- ½ cup chopped fresh herbs (basil and cilantro recommended)
- Zest and juice of ½ lemon
- ½ tablespoon olive oil (optional)
Instructions
- In a pot over medium heat, warm 1 tablespoon of olive oil.
- Once the oil is shimmering, add the diced onions and sauté for about 2 minutes until they start to soften.
- Add the minced garlic and sauté for another minute until fragrant.
- Sprinkle in the salt and pepper, giving it a quick stir.
- Next, pour in the couscous and toast it for about 2 to 3 minutes, stirring continuously.
- Add the broth and cover the pot with a lid. Allow it to simmer for 8 to 10 minutes or until all the liquid is absorbed.
- Once cooked, remove the pot from heat and stir in the chopped herbs, lemon juice, and zest. Drizzle with an additional ½ tablespoon of olive oil if desired.
- Mix everything well and adjust seasoning with more salt and pepper to taste.
Notes
Feel free to customize the selection of herbs based on your preference. For added richness, drizzle with extra olive oil.
