Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt in a mixing bowl.
- Cream the softened butter and granulated sugar until light and fluffy in a separate bowl.
- Beat in the egg, followed by lemon juice, lemon zest, and vanilla extract until well combined.
- Fold in the dry ingredients gradually until just blended, being careful not to overmix!
- Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on a wire rack.
- Combine powdered sugar, lemon juice, and lemon zest in a bowl for frosting until smooth and creamy.
- Frost the cooled cookies generously before serving!
Notes
For a thicker cookie, chill the dough for 30 minutes before baking. Store in an airtight container at room temperature for up to a week.
