Ingredients

  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy in a separate bowl.
  4. Beat in the egg, followed by lemon juice, lemon zest, and vanilla extract until well combined.
  5. Fold in the dry ingredients gradually until just blended, being careful not to overmix!
  6. Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them apart.
  7. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on a wire rack.
  9. Combine powdered sugar, lemon juice, and lemon zest in a bowl for frosting until smooth and creamy.
  10. Frost the cooled cookies generously before serving!
