Description

A light yet hearty soup combining the freshness of lemon and dill with the goodness of cabbage.


Ingredients

Scale
  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 lemon, juiced and zested
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Mix in the chopped cabbage and let it cook for approx. 5 minutes, stirring occasionally, until it starts to wilt.
  4. Pour in the vegetable broth, lemon juice, and lemon zest. Increase heat and bring to a boil. Once boiling, reduce heat and let it simmer for 15-20 minutes.
  5. Stir in the fresh dill and season with salt and pepper to taste.
  6. Serve hot and enjoy your wholesome, delicious soup!

Notes

Serve it with crusty bread or a side salad for a complete meal. It also freezes well.
