Description
A light yet hearty soup combining the freshness of lemon and dill with the goodness of cabbage.
Ingredients

- 1 small head of cabbage, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 lemon, juiced and zested
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Mix in the chopped cabbage and let it cook for approx. 5 minutes, stirring occasionally, until it starts to wilt.
- Pour in the vegetable broth, lemon juice, and lemon zest. Increase heat and bring to a boil. Once boiling, reduce heat and let it simmer for 15-20 minutes.
- Stir in the fresh dill and season with salt and pepper to taste.
- Serve hot and enjoy your wholesome, delicious soup!
Notes
Serve it with crusty bread or a side salad for a complete meal. It also freezes well.
