Description

Ingredients

  • 1 cup cottage cheese (low-fat)
  • 1 cup fresh blueberries (plus extra for garnish)
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Combine the cottage cheese, fresh blueberries, lemon zest, honey (or maple syrup), almond flour, vanilla extract, and a pinch of salt in a mixing bowl, being careful not to crush the blueberries too much.
  2. Transfer the mixture to the refrigerator and chill for 15-20 minutes.
  3. Scoop out portions using a tablespoon and roll them into tight, compact balls.
  4. Place the balls on a parchment-lined baking sheet.
  5. Preheat your oven to 325°F (160°C) (optional) and bake the bites for 8-10 minutes.
  6. Allow them to cool slightly and garnish with extra blueberries before serving.
