Delicious lemon bar cookies that blend tangy lemon curd with a soft, chewy cookie base, perfect for any gathering.
Ingredients

- 1/2 cup granulated sugar
- 3 egg yolks
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 4 tbsp unsalted butter (room temperature)
- 7 tbsp unsalted butter (room temperature)
- 3.5 ounces full-fat cream cheese (room temperature)
- 1 cup granulated sugar
- 1 whole large egg (room temperature)
- 1 large egg yolk (room temperature)
- 1 tsp vanilla extract
- 1 3/4 cup all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- Powdered sugar (for rolling)
Instructions
- Combine the 1/2 cup sugar, lemon juice, and three egg yolks in a small pot. Cook over medium-low heat for about 12 minutes, stirring constantly until the curd is vibrant yellow and thick. Pour into a bowl and stir in the butter, then let it cool and chill in the fridge.
- Cream together the 4 tbsp of butter and cream cheese until well mixed. Add in the 1 cup of sugar and whip until fluffy.
- Mix in the whole egg, remaining egg yolk, and vanilla extract until smooth.
- Fold in the all-purpose flour, baking powder, and salt until just combined.
- Use a standard cookie scoop to portion out the dough, rolling each piece in powdered sugar. Transfer to a parchment-lined baking tray.
- Press the bottom of a tablespoon into the center of each dough ball to create a well. Fill each well with about one teaspoon of the lemon curd.
- Freeze the cookies for 1-2 hours until solid. Once set, bake at 350°F (180°C) for 12-13 minutes or until edges are lightly browned.
- Cool completely on a wire rack before dusting with additional powdered sugar. Enjoy!

Store cookies in an airtight container at room temperature for up to five days or freeze for up to three months. Let thaw before serving.
