Description

Korean Beef Tacos blend vibrant flavors of traditional Korean cuisine with handheld taco convenience, featuring smoky beef, caramelized kimchi, and Sriracha mayo.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup kimchi, chopped and caramelized
  • 1/4 cup mayonnaise mixed with Sriracha to taste (Sriracha mayo)
  • Corn or flour tortillas
  • Green onions, sliced for garnish

Instructions

  1. Add the ground beef, soy sauce, sesame oil, minced garlic, and grated ginger to a skillet over medium heat. Cook until browned and cooked through, about 5-7 minutes.
  2. Caramelize the kimchi in a separate pan over medium heat until soft and slightly browned, about 3-4 minutes.
  3. Warm the tortillas in a dry skillet for about 30 seconds on each side or until pliable.
  4. Assemble the tacos by placing a portion of the beef mixture onto each tortilla. Top with caramelized kimchi and a drizzle of Sriracha mayo.
  5. Garnish with sliced green onions and serve immediately.

Notes

Keep leftovers in an airtight container for 2-3 days. Store beef and kimchi separately from tortillas to avoid sogginess.
