- 1 lb ground beef
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 tablespoon ginger, grated
- 1 cup kimchi, chopped and caramelized
- 1/4 cup mayonnaise mixed with Sriracha to taste (Sriracha mayo)
- Corn or flour tortillas
- Green onions, sliced for garnish
Instructions
- Add the ground beef, soy sauce, sesame oil, minced garlic, and grated ginger to a skillet over medium heat. Cook until browned and cooked through, about 5-7 minutes.
- Caramelize the kimchi in a separate pan over medium heat until soft and slightly browned, about 3-4 minutes.
- Warm the tortillas in a dry skillet for about 30 seconds on each side or until pliable.
- Assemble the tacos by placing a portion of the beef mixture onto each tortilla. Top with caramelized kimchi and a drizzle of Sriracha mayo.
- Garnish with sliced green onions and serve immediately.
Notes
Keep leftovers in an airtight container for 2-3 days. Store beef and kimchi separately from tortillas to avoid sogginess.
