- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 2 cans sweetened condensed milk
- 1 cup key lime juice
- 4 large egg yolks
- Zest of 2 limes
- Whipped cream, for topping
Instructions
- Preheat your oven to 350°F (175°C), and grease a 9×9 inch baking pan.
- Mix together the graham cracker crumbs, melted butter, and sugar until well incorporated. Press firmly into the bottom of the prepared pan.
- Whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth and creamy.
- Pour the key lime filling over the crust in the pan.
- Bake in the preheated oven for 15-20 minutes, or until the filling is set. Let cool.
- Chill in the refrigerator for at least 2 hours before slicing.
- Serve chilled, topped generously with whipped cream.
Notes
For a gluten-free version, use gluten-free graham crackers. Use fresh key lime juice for the best flavor.
