- 3 ripe bananas
- 1/2 cup melted butter
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a jumbo muffin tin with paper liners.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Stir the melted butter into the mashed bananas until well integrated.
- Mix in the sugar, vanilla extract, and eggs until combined.
- Sprinkle the baking soda and salt over the mixture, then mix thoroughly.
- Add the flour and gently fold it in until just combined.
- Fold in the chocolate chips until evenly distributed.
- Divide the batter evenly into the prepared muffin tin, filling each cup to the top.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
