Description

Deliciously moist muffins packed with ripe bananas and rich chocolate chips, perfect for breakfast or an afternoon snack.


Ingredients

  • 3 ripe bananas
  • 1/2 cup melted butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jumbo muffin tin with paper liners.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Stir the melted butter into the mashed bananas until well integrated.
  4. Mix in the sugar, vanilla extract, and eggs until combined.
  5. Sprinkle the baking soda and salt over the mixture, then mix thoroughly.
  6. Add the flour and gently fold it in until just combined.
  7. Fold in the chocolate chips until evenly distributed.
  8. Divide the batter evenly into the prepared muffin tin, filling each cup to the top.
  9. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool in the pan for a few minutes before transferring to a wire rack.
