Instructions
- Sear the chicken: Heat vegetable oil in a large pot over medium heat. Add the chicken thighs, ensuring not to crowd the pot, and sear them until golden brown on all sides (5-7 minutes). Remove and set aside.
- Sauté the vegetables: In the same pot, add onions, garlic, ginger, bell peppers, and carrots. Sauté for about 5-6 minutes until softened.
- Add the flavors: Stir in browning sauce, thyme, allspice, and black pepper. Mix well.
- Simmer the chicken: Return the chicken to the pot, pour in chicken broth to cover the meat. Cover, reduce heat to low, and simmer for 45 minutes to 1 hour until tender.
- Final touches: Taste and adjust seasoning if needed. Serve with steamed rice or fried plantains.
