Ingredients

  • Chicken thighs: Bone-in, skin-on
  • Browning sauce
  • Onions, chopped

  • Ginger, grated
  • Bell peppers, sliced
  • Carrots, sliced
  • Thyme, fresh
  • Scallions, sliced
  • Allspice
  • Black pepper
  • Salt
  • Vegetable oil
  • Chicken broth

Instructions

  1. Sear the chicken: Heat vegetable oil in a large pot over medium heat. Add the chicken thighs, ensuring not to crowd the pot, and sear them until golden brown on all sides (5-7 minutes). Remove and set aside.
  2. Sauté the vegetables: In the same pot, add onions, garlic, ginger, bell peppers, and carrots. Sauté for about 5-6 minutes until softened.
  3. Add the flavors: Stir in browning sauce, thyme, allspice, and black pepper. Mix well.
  4. Simmer the chicken: Return the chicken to the pot, pour in chicken broth to cover the meat. Cover, reduce heat to low, and simmer for 45 minutes to 1 hour until tender.
  5. Final touches: Taste and adjust seasoning if needed. Serve with steamed rice or fried plantains.

Notes

Marinate the chicken for extra flavor and add a Scotch bonnet pepper for heat if desired.
