  • 1 cup bell peppers (diced)
  • 1 cup zucchini (diced)
  • 2 cloves garlic (minced)
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Parmesan cheese (for serving)
  • Olive oil (for cooking)

Instructions

  1. Begin by cooking the bow tie pasta according to the package instructions. Once it’s al dente, drain and set aside.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the minced garlic, diced bell peppers, and zucchini. Sauté until they’re tender and fragrant, which takes about 5-7 minutes.
  3. Using a spatula, push the veggies to one side of the skillet and add the Italian sausage. Cook the sausage until it’s browned and cooked through, breaking it apart with your spatula as it cooks.
  4. Once the sausage is done, stir in the canned diced tomatoes, dried basil, oregano, salt, and pepper. Mix everything well and let it simmer together for about 5-7 minutes so the flavors meld beautifully.
  5. Add the cooked bow tie pasta to the skillet and gently toss everything to combine. The pasta should be beautifully coated in the sauce.
  6. Serve hot, generously topped with grated Parmesan cheese.
