Description

A hearty and vibrant Italian Green Vegetable Minestrone, packed with fresh vegetables and flavors that nourish both body and spirit.


Ingredients

  • 1 onion (diced small)
  • 4 cloves garlic (sliced)
  • 1 carrot (diced)
  • 1 stick celery (diced)
  • 2 cups green cabbage (shredded)
  • 1 sprig rosemary
  • 8 sprigs thyme
  • 3 tbsp olive oil
  • 1.5 qt low-sodium vegetable stock (plus more as needed)
  • 1.5 cups golden potatoes (diced into ½ inch cubes)
  • 1.5 tsp sea salt (plus more to taste)
  • 15 oz canned borlotti or cannellini beans (drained and rinsed)
  • 1 cup baby arugula or spinach
  • 1 tsp black peppercorns
  • 1 bunch fresh basil (leaves only)
  • ¼ cup toasted pine nuts, walnuts, or hazelnuts
  • 1/3 cup extra virgin olive oil
  • 1 lemon (juiced)
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic
  • A pinch of sea salt (to taste)
  • 4 inches Parmesan rind (optional)

Instructions

  1. Heat a large soup pot over medium flame and add a generous lug of olive oil.
  2. Once hot, add the diced onion, celery, and carrot. Sauté with a pinch of salt for about 10 minutes, stirring occasionally.
  3. Add the sliced garlic, rosemary, thyme, and black peppercorns; toss to ensure they’re well coated in the oil.
  4. Stir in the shredded cabbage and continue cooking for an additional 5 to 10 minutes, until wilted.
  5. Incorporate the diced potatoes, Parmesan rind, and vegetable stock. Bring it all to a lively simmer.
  6. Cook together until the potatoes are tender, about 10 more minutes.
  7. Finally, stir in the rinsed beans and adjust the seasonings with additional salt as needed.

Notes

Top each bowl with a drizzle of extra virgin olive oil and a sprinkle of fresh herbs or grated Parmesan for added flavor. Pairs well with crusty bread or a refreshing salad.
