Description

Ingredients

  • 4 chicken thighs
  • 1 can diced tomatoes
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil (extra virgin)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Sear the chicken: Heat the olive oil in a skillet over medium heat. Sear the chicken thighs until golden brown on both sides, about 3-4 minutes each.
  2. Combine ingredients: In your crockpot, mix together the diced tomatoes, minced garlic, chopped onion, oregano, basil, and season with salt and pepper.
  3. Layer the chicken: Carefully place the seared chicken thighs right on top of the tomato mixture.
  4. Slow cook: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  5. Serve with panache: Garnish with fresh parsley and stir before serving.
