- 4 chicken thighs
- 1 can diced tomatoes
- 4 cloves garlic, minced
- 1 onion, chopped

- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- Sear the chicken: Heat the olive oil in a skillet over medium heat. Sear the chicken thighs until golden brown on both sides, about 3-4 minutes each.
- Combine ingredients: In your crockpot, mix together the diced tomatoes, minced garlic, chopped onion, oregano, basil, and season with salt and pepper.
- Layer the chicken: Carefully place the seared chicken thighs right on top of the tomato mixture.
- Slow cook: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Serve with panache: Garnish with fresh parsley and stir before serving.
