Description

A warm, crispy panini filled with gooey cheese, savory chicken, and vibrant roasted red peppers.

Ingredients

  • Crusty bread (like ciabatta or focaccia)
  • Mozzarella cheese
  • Roasted red peppers
  • Shredded chicken (store-bought or homemade)
  • Garlic pesto

Instructions

  1. Preheat your panini press or grill to medium heat.
  2. Slice the crusty bread into thick pieces and spread a generous layer of garlic pesto on one side of each slice.
  3. Take two slices of bread and layer them with shredded chicken, roasted red peppers, and mozzarella cheese.
  4. Close the sandwich by placing the pesto side of another slice of bread on top of the filling.
  5. Carefully place the sandwich into your preheated panini press or on the grill.
  6. Cook for about 3-5 minutes, until the bread is golden brown, and the cheese is perfectly melted.
  7. Remove from heat, slice into halves or quarters, and serve warm!

Notes

Serve with mixed greens, potato chips, or marinara sauce for dipping.
