Description

A soft and fluffy coffee cake infused with tropical guava flavor, perfect for brunch or any special occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter (softened)
  • 2 large eggs
  • 1 cup guava juice or nectar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Guava jam (optional, adds a delightful swirl)
  • Icing glaze: 1 cup powdered sugar + 2-3 tbsp milk
  • Guava syrup (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line an 8-inch round cake pan.
  2. Cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Add half of the dry ingredients to the butter mixture and mix well.
  6. Pour in the guava juice and sour cream, stirring until combined, then fold in the remaining dry ingredients until just combined.
  7. If using, swirl in guava jam for added flavor.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool before drizzling it with icing glaze and guava syrup.

Notes

Store leftovers in an airtight container at room temperature for up to three days, or wrap and freeze for up to three months. Thaw overnight in the fridge before serving.
