Description
A hearty and comforting Irish stew served with creamy mashed potatoes, perfect for chilly evenings.
Ingredients
Scale
- 2 Tablespoons Olive Oil
- 3 Pounds Beef Stew Meat (or Lamb for a traditional twist)
- 1/4 Cup All Purpose Flour
- 2 teaspoons Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 2 teaspoons Fresh Rosemary (or 1 teaspoon dried)
- 1 teaspoon Dried Thyme
- 4 Cups Beef Broth
- 5 Carrots (peeled and cut into chunks)
- 1 Cup Frozen Peas
- 2 Bay Leaves
- Mashed Potatoes for Serving
Instructions
- Heat the Olive Oil in a large Dutch Oven over medium-high heat.
- Season the Meat: In a large Ziploc bag, combine the stew meat with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme. Shake well to coat the meat evenly.
- Sear the Meat: Once the oil is hot, add the coated stew meat to the pot, searing all sides until browned.
- Incorporate Broth: Gradually stir in the beef broth while continuing to stir, ensuring everything is mixed well.
- Add the Vegetables: Toss in the carrots and bay leaves, then bring the mixture to a boil.
- Simmer: Reduce the heat to medium-low and cover the pot. Let it simmer for about 45 minutes, stirring occasionally to prevent sticking.
- Finish with Peas: Just 5 minutes before serving, stir in the frozen peas. Remove the bay leaves once cooked through.
- Serve: Ladle the stew over a generous scoop of creamy mashed potatoes.
