Description

A quick and easy recipe for creamy and cheesy scalloped potatoes made in the Instant Pot, perfect for family gatherings and busy weeknights.


Ingredients

  • 2 pounds potatoes, thinly sliced
  • 1 onion, finely chopped
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons butter

Instructions

  1. Sauté the butter in the Instant Pot on sauté mode, then add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
  2. Layer half of the sliced potatoes in the pot, then sprinkle with salt, pepper, and half of the cheddar and Parmesan cheese.
  3. Add the remaining potato slices on top of the first layer, and pour the heavy cream over the potatoes.
  4. Seal the lid of the Instant Pot and cook on high pressure for 25 minutes.
  5. Release the pressure naturally for about 10 minutes, then do a quick release for any remaining pressure.
  6. Stir the potatoes gently, add the remaining cheese on top, and let sit for a few minutes before serving warm.

Notes

For variations, consider mixing in cooked bacon or using different cheeses like Gouda or Gruyère.
