A quick and easy recipe for creamy and cheesy scalloped potatoes made in the Instant Pot, perfect for family gatherings and busy weeknights.

- 2 pounds potatoes, thinly sliced
- 1 onion, finely chopped
- 2 cups heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 2 tablespoons butter
Instructions
- Sauté the butter in the Instant Pot on sauté mode, then add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
- Layer half of the sliced potatoes in the pot, then sprinkle with salt, pepper, and half of the cheddar and Parmesan cheese.
- Add the remaining potato slices on top of the first layer, and pour the heavy cream over the potatoes.
- Seal the lid of the Instant Pot and cook on high pressure for 25 minutes.
- Release the pressure naturally for about 10 minutes, then do a quick release for any remaining pressure.
- Stir the potatoes gently, add the remaining cheese on top, and let sit for a few minutes before serving warm.
Notes
For variations, consider mixing in cooked bacon or using different cheeses like Gouda or Gruyère.
