Ingredients

  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Tortillas for serving
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Prep the Ingredients: Slice your chicken breasts, bell peppers, and onion; mince the garlic.
  2. Season the Chicken: Coat the chicken strips with fajita seasonings.
  3. Sauté the Veggies: Softening the onion and bell peppers in your Instant Pot.
  4. Add Chicken and Seasonings: Lightly brown the chicken.
  5. Deglaze and Pressure Cook: Add broth and lime juice, then cook under pressure.
  6. Release and Serve: Quick release, stir, then it’s ready to assemble in tortillas!

Notes

For a plant-based version, substitute chicken with tofu. Marinate the chicken for deeper flavor if time allows.
