Description

A refreshing salad featuring imitation crab and fresh vegetables, tossed in a creamy dressing. Perfect for summer gatherings or quick lunches.

Ingredients

Scale
  • 8 oz shredded imitation crab
  • 1 cup sweet corn (canned or frozen)
  • 1 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the shredded imitation crab, sweet corn, diced celery, diced bell pepper, and diced red onion in a large bowl.
  2. Mix together the mayonnaise and lemon juice in a separate small bowl until smooth.
  3. Pour the dressing over the crab mixture. Stir gently until everything is well coated.
  4. Season with salt and pepper to taste. Adjust as desired.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld beautifully.

Notes

For a tangy twist, substitute mayonnaise with Greek yogurt. Serve on a bed of greens or in pita for added flair.
