Instructions

  1. Marinate the chicken: In a mixing bowl, combine honey, lime juice, lime zest, olive oil, minced garlic, cumin, paprika, salt, and black pepper. Add the chicken breasts, ensuring they’re well coated, and let them marinate for at least 30 minutes (or overnight for deeper flavor).
  2. Make the mango salsa: While the chicken marinates, dice the mango, chop the red onion, and mince the jalapeño if using. Combine these in a bowl with cilantro and the juice of 1 lime. Gently toss and adjust seasoning as needed.
  3. Cook the chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until it reaches 165°F (75°C). Let it rest before slicing.
