- 1/4 cup olive oil
- 1–2 teaspoons fresh grated ginger
- 1 tablespoon soy sauce
- 1 clove garlic (minced)
- 1 tablespoon brown sugar
- Salt & pepper (to taste)
- Sesame seeds (for garnish, optional)
Instructions
- Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and give it a quick spray with non-stick cooking spray for easy cleanup.
- Whisk together the glaze: In a small bowl, mix honey, olive oil, grated ginger, soy sauce, minced garlic, brown sugar, and a pinch of salt and pepper until fully combined.
- Toss the carrots: Place the prepared carrots in a large bowl or right on the baking sheet. Pour the glaze over them and toss until they’re evenly coated.
- Roast in the oven: Spread the carrots out in a single layer and bake for 15-25 minutes, turning them once halfway through cooking. Look for a fork-tender texture and a beautiful glaze.
- Serve: If desired, sprinkle with sesame seeds for an extra touch of flavor and presentation.
