Description

These Honey Ginger Roasted Carrots combine sweetness and spice, transforming humble carrots into an extraordinary side dish perfect for any meal.

Ingredients

Scale
  • 1 pound carrots (peeled; cut into pieces if larger)
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 12 teaspoons fresh grated ginger
  • 1 tablespoon soy sauce
  • 1 clove garlic (minced)
  • 1 tablespoon brown sugar
  • Salt & pepper (to taste)
  • Sesame seeds (for garnish, optional)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and give it a quick spray with non-stick cooking spray for easy cleanup.
  2. Whisk together the glaze: In a small bowl, mix honey, olive oil, grated ginger, soy sauce, minced garlic, brown sugar, and a pinch of salt and pepper until fully combined.
  3. Toss the carrots: Place the prepared carrots in a large bowl or right on the baking sheet. Pour the glaze over them and toss until they’re evenly coated.
  4. Roast in the oven: Spread the carrots out in a single layer and bake for 15-25 minutes, turning them once halfway through cooking. Look for a fork-tender texture and a beautiful glaze.
  5. Serve: If desired, sprinkle with sesame seeds for an extra touch of flavor and presentation.

Notes

Feel free to substitute maple syrup for a vegan option or coconut aminos for a gluten-free variation.
