- 2 tablespoons Dijon mustard

- 2 medium sweet potatoes, diced
- 2 cups Brussels sprouts, halved
Instructions
- Preheat your oven to 400°F (200°C).
- Combine honey, Dijon mustard, olive oil, garlic powder, salt, and pepper in a mixing bowl.
- Arrange the chicken on a sheet pan and coat it with the honey Dijon mixture.
- Toss the sweet potatoes and Brussels sprouts in the remaining glaze and add them to the pan.
- Roast for about 25-30 minutes, or until the chicken is 165°F and vegetables are tender.
