Ingredients

  • 4 chicken thighs or breasts
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 medium sweet potatoes, diced
  • 2 cups Brussels sprouts, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine honey, Dijon mustard, olive oil, garlic powder, salt, and pepper in a mixing bowl.
  3. Arrange the chicken on a sheet pan and coat it with the honey Dijon mixture.
  4. Toss the sweet potatoes and Brussels sprouts in the remaining glaze and add them to the pan.
