Description

Delicious sliders featuring tender chicken thighs marinated in a honey-chipotle sauce, topped with crunchy slaw.


Ingredients

  • 1.5 lbs boneless skinless chicken thighs (Pounded to an even thickness)
  • 1 tbsp olive oil (For grilling)
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.33 cup honey
  • 2 tbsp chipotle peppers in adobo (Finely chopped)
  • 0.25 cup ketchup
  • 6 whole soft brioche slider buns
  • 2 tbsp unsalted butter (For toasting buns)
  • 1 cup shredded green cabbage
  • 0.5 cup purple cabbage (Thinly sliced)
  • 0.5 cup shredded carrots
  • 0.25 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 2 tbsp sour cream
  • 1 tbsp milk
  • 2 cloves garlic (Minced)

Instructions

  1. Pound the chicken thighs to an even thickness for uniform cooking. Then, season both sides with kosher salt and black pepper.
  2. In a bowl, whisk together honey, chopped chipotle peppers, and ketchup. Set aside.
  3. Heat olive oil in a grill pan over medium-high heat. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. Brush the honey-chipotle mixture on the chicken during the final minute of cooking, allowing it to caramelize slightly.
  5. While the chicken is cooking, mix shredded green and purple cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, sour cream, milk, and minced garlic in a separate bowl. Stir until well combined.
  6. Melt unsalted butter in a pan and toast the brioche buns until golden brown.
  7. Slice the glazed chicken and place it on the bottom half of the toasted buns. Top with a generous portion of slaw and cover with the top bun.

Notes

These sliders can be served warm and pair well with sweet potato fries or a garden salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
