Description

Ingredients

  • 3 cups all-purpose flour
  • 3 teaspoons baking soda
  • 2 teaspoons cinnamon
  • ยฝ cup (1 stick) unsalted butter, room temperature
  • ยฝ cup honey
  • 1 ยฝ cups granulated sugar
  • 2 large eggs
  • 2 ยฝ cups unsweetened applesauce

Instructions

  1. Preheat your oven to 350ยฐF and lightly coat your baking pans with non-stick spray.
  2. In a large mixing bowl, whisk together the flour, baking soda, and cinnamon until well combined.
  3. In the bowl of a stand mixer, cream the butter, granulated sugar, and honey together at medium-high speed until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition until fully integrated.
  5. Mix in the applesauce until smooth.
  6. Gradually add the flour mixture, beating just until combined.
  7. Pour the batter evenly into your prepared pans.
  8. Bake the loaf pans for 35-45 minutes and the mini pans for 30-35 minutes.
  9. Let the honey cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Wrap cooled cake in plastic wrap to keep it fresh. It can be stored at room temperature or in the refrigerator for 5-7 days.
