- 2 cups fresh peaches, peeled and diced
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 package refrigerated pie crusts (contains 2 crusts)
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- Cinnamon sugar (for sprinkling)
Instructions
- Preheat your oven to 425ยฐF (220ยฐC).
- In a medium bowl, mix together diced peaches, sugar, cornstarch, vanilla extract, and lemon juice. Stir until well combined and set aside to let the flavors meld.
- Roll out your pie crusts on a lightly floured surface. Use a round cutter to cut circles from the dough.
- Place a tablespoon of the peach mixture in the center of each circle. Fold the crust over to form a half-moon shape and crimp the edges with a fork to seal.
- In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of the pastries with this mixture and sprinkle with cinnamon sugar for added sweetness.
- Place the hand pies on a baking sheet lined with parchment paper, ensuring they have a little space between each for proper air circulation.
- Bake in the preheated oven for 20-25 minutes, or until they are golden brown and puffed.
- Allow them to cool for a few minutes before serving, as the filling will be quite hot.
