- 1.5 lbs chicken (pounded to an even 1/2-inch thickness)
- Salt and pepper to taste
- 3/4 cup flour
- 3 eggs (room temperature)
- 1.5 cups breadcrumbs
- 1/2 cup parmesan (freshly grated)
- 2 tsp Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/3 cup olive oil
- Lemon wedges for serving
Instructions
- Pound the chicken breasts to an even 1/2-inch thickness and season both sides with salt and pepper.
- Set up a breading station: place flour in one dish, beat the eggs in another, and combine breadcrumbs, parmesan, Italian seasoning, garlic powder, and paprika in a third dish.
- Dredge each chicken cutlet in flour, shaking off excess, then dip it into the beaten eggs, allowing any excess to drip off.
- Coat the cutlet in the breadcrumbs, pressing gently to adhere.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded cutlets to the skillet.
- Cook for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F).
- Remove from the skillet and let drain on paper towels. Serve warm with lemon wedges.
Notes
For a spicy kick, add cayenne pepper to the breadcrumbs. Serve with tzatziki sauce or a tabbouleh salad for extra flavor.
