Ingredients

  • 1.5 lbs chicken (pounded to an even 1/2-inch thickness)
  • Salt and pepper to taste
  • 3/4 cup flour
  • 3 eggs (room temperature)
  • 1.5 cups breadcrumbs
  • 1/2 cup parmesan (freshly grated)
  • 2 tsp Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/3 cup olive oil
  • Lemon wedges for serving

Instructions

  1. Pound the chicken breasts to an even 1/2-inch thickness and season both sides with salt and pepper.
  2. Set up a breading station: place flour in one dish, beat the eggs in another, and combine breadcrumbs, parmesan, Italian seasoning, garlic powder, and paprika in a third dish.
  3. Dredge each chicken cutlet in flour, shaking off excess, then dip it into the beaten eggs, allowing any excess to drip off.
  4. Coat the cutlet in the breadcrumbs, pressing gently to adhere.
  5. Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded cutlets to the skillet.
  6. Cook for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F).
  7. Remove from the skillet and let drain on paper towels. Serve warm with lemon wedges.

Notes

For a spicy kick, add cayenne pepper to the breadcrumbs. Serve with tzatziki sauce or a tabbouleh salad for extra flavor.
