Instructions
- Preheat the oven to 350°F (175°C).
- Cream the softened butter and powdered sugar together until light and fluffy.
- Whisk together the all-purpose flour, cornstarch, and salt in a separate bowl.
- Add the dry ingredients to the butter mixture, mixing until well combined.
- Stir in the lemon juice, lemon zest, and vanilla extract until integrated.
- Roll the dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball using the bottom of a glass.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
