Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the softened butter and powdered sugar together until light and fluffy.
  3. Whisk together the all-purpose flour, cornstarch, and salt in a separate bowl.
  4. Add the dry ingredients to the butter mixture, mixing until well combined.
  5. Stir in the lemon juice, lemon zest, and vanilla extract until integrated.
  6. Roll the dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball using the bottom of a glass.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a twist, add white chocolate chips or toasted coconut to the dough.
