Description

Ingredients

  • 1 cup rhubarb, diced
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup lemon juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Cream together the softened butter and sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the fresh lemon juice.
  4. Combine in another bowl, the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture, stirring until just blended.
  5. Fold in the diced rhubarb until evenly incorporated.
  6. Pour the batter into your prepared baking pan and spread it out evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool in the pan before slicing into squares. For an elegant finish, dust with powdered sugar before serving if desired.
