Ingredients

  • 1 cup nuts (your choice—almonds, walnuts, or a mix)
  • 1/2 cup honey or maple syrup
  • 1/2 cup peanut butter or almond butter
  • 1/2 cup dried fruits (like cranberries or raisins)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper for easy removal.
  2. In a large bowl, combine the rolled oats, nuts, and salt. Mix well.
  3. In a saucepan, heat the honey (or maple syrup) and peanut butter (or almond butter) over low heat. Stir until smooth and fully combined.
  4. Remove from heat and incorporate the vanilla extract into the mixture.
  5. Pour this mixture over the oats and nuts, stirring until everything is evenly coated.
  6. Add in the dried fruits, mixing until they are well distributed.
  7. Press the oat mixture firmly into the prepared baking pan to ensure the bars hold together.
  8. Bake in the oven for 15-20 minutes, or until the top is golden brown and slightly firm to the touch.
  9. Once done, let the bars cool completely in the pan before slicing them into your desired shapes.

Notes

For nut-free options, substitute nuts with seeds like sunflower or pumpkin seeds. Adding chocolate chips or a sprinkle of cinnamon can enhance the flavor.
