- 2 pounds of baby potatoes
- 4 tablespoons of unsalted butter
- 2 tablespoons of olive oil
- 2 teaspoons of garlic powder
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh herbs (like rosemary or parsley) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes and slice them in half.
- In a large bowl, melt the butter and whisk it together with olive oil, garlic powder, paprika, salt, and pepper.
- Toss the halved potatoes in the butter mixture until they’re evenly coated.
- Spread the coated potatoes in a single layer on a baking sheet.
- Roast in the oven for 30-35 minutes, flipping halfway through, until they turn golden brown and crispy.
- Once they’re done, take them out of the oven and garnish with fresh herbs before serving.
Notes
Experiment with different herbs or spices based on your personal preference. For a spicier kick, consider adding a pinch of red pepper flakes.
