Description

Ingredients

  • 2 pounds of baby potatoes
  • 4 tablespoons of unsalted butter
  • 2 tablespoons of olive oil
  • 2 teaspoons of garlic powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh herbs (like rosemary or parsley) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and slice them in half.
  3. In a large bowl, melt the butter and whisk it together with olive oil, garlic powder, paprika, salt, and pepper.
  4. Toss the halved potatoes in the butter mixture until they’re evenly coated.
  5. Spread the coated potatoes in a single layer on a baking sheet.
  6. Roast in the oven for 30-35 minutes, flipping halfway through, until they turn golden brown and crispy.
  7. Once they’re done, take them out of the oven and garnish with fresh herbs before serving.

Notes

Experiment with different herbs or spices based on your personal preference. For a spicier kick, consider adding a pinch of red pepper flakes.
