Description

A delightful cake featuring ripe bananas and walnuts, layered with whipped cream for a comforting dessert.


Ingredients

  • 3 ripe bananas
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 2 cups heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Combine the all-purpose flour, baking soda, and salt in a separate bowl.
  6. Gradually mix this dry mixture into the creamed mixture, alternating with the mashed bananas.
  7. Fold in the chopped walnuts until evenly distributed.
  8. Pour the batter into the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Cool cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  10. Whip the heavy cream with powdered sugar until stiff peaks form.
  11. Layer one cake with whipped cream, then add the second layer on top and spread with more whipped cream.
  12. Garnish with walnuts and banana slices, if desired.

Notes

For a dairy-free option, use coconut cream instead of heavy cream.
