- 3 ripe bananas
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 cup chopped walnuts
- 2 cups heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mash the ripe bananas until smooth in a mixing bowl.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- Combine the all-purpose flour, baking soda, and salt in a separate bowl.
- Gradually mix this dry mixture into the creamed mixture, alternating with the mashed bananas.
- Fold in the chopped walnuts until evenly distributed.
- Pour the batter into the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Layer one cake with whipped cream, then add the second layer on top and spread with more whipped cream.
- Garnish with walnuts and banana slices, if desired.
Notes
For a dairy-free option, use coconut cream instead of heavy cream.
