Description

A flavorful burrito packed with chicken, sausage, shrimp, rice, and veggies, inspired by classic Louisiana jambalaya.


Ingredients

  • 2 cups cooked rice
  • 1 cup diced chicken
  • 1 cup cooked andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 4 large tortillas
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Heat a splash of oil in a large skillet over medium heat. Toss in the diced onions and bell peppers, sautéing until softened, about 3-5 minutes.
  2. Add the minced garlic and stir for another minute until fragrant.
  3. Incorporate your diced chicken, sliced sausage, and shrimp. Cook until the shrimp turns pink.
  4. Stir in the canned diced tomatoes, chicken broth, cooked rice, and Cajun seasoning. Mix well, then let it simmer for 10-15 minutes.
  5. Meanwhile, warm the tortillas on a separate pan until pliable.
  6. Spoon the jambalaya mixture onto each tortilla, sprinkle with shredded cheese, then roll them up tightly.
  7. Serve warm and enjoy your flavorful creation!
