- 2 cups cooked rice
- 1 cup diced chicken
- 1 cup cooked andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 4 large tortillas
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Heat a splash of oil in a large skillet over medium heat. Toss in the diced onions and bell peppers, sautéing until softened, about 3-5 minutes.
- Add the minced garlic and stir for another minute until fragrant.
- Incorporate your diced chicken, sliced sausage, and shrimp. Cook until the shrimp turns pink.
- Stir in the canned diced tomatoes, chicken broth, cooked rice, and Cajun seasoning. Mix well, then let it simmer for 10-15 minutes.
- Meanwhile, warm the tortillas on a separate pan until pliable.
- Spoon the jambalaya mixture onto each tortilla, sprinkle with shredded cheese, then roll them up tightly.
- Serve warm and enjoy your flavorful creation!
