- 1 lb. boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup corn (frozen or fresh)
- 1 tbsp Cajun seasoning
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Chopped green onions and cilantro for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, stirring until they become soft and fragrant.
- Add the chicken breasts to the pot. Cook them until they are browned on both sides.
- Pour in the chicken broth, diced tomatoes, white beans, corn, Cajun seasoning, cumin, salt, and black pepper.
- Bring the mixture to a boil. Then, reduce the heat and let it simmer for about 25-30 minutes.
- Remove the chicken from the pot, shred it using two forks, and return the shredded chicken to the pot.
- Allow the chili to simmer for another 10 minutes, letting all the flavors meld together.
- Serve hot, garnished with chopped green onions and cilantro if you’d like.
Notes
This chili stores well in the refrigerator for 3-4 days and can be frozen for up to 3 months.
