Description

A comforting and flavorful chili that combines chicken, beans, and Cajun spices for a hearty meal.


Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup corn (frozen or fresh)
  • 1 tbsp Cajun seasoning
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Chopped green onions and cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, stirring until they become soft and fragrant.
  2. Add the chicken breasts to the pot. Cook them until they are browned on both sides.
  3. Pour in the chicken broth, diced tomatoes, white beans, corn, Cajun seasoning, cumin, salt, and black pepper.
  4. Bring the mixture to a boil. Then, reduce the heat and let it simmer for about 25-30 minutes.
  5. Remove the chicken from the pot, shred it using two forks, and return the shredded chicken to the pot.
  6. Allow the chili to simmer for another 10 minutes, letting all the flavors meld together.
  7. Serve hot, garnished with chopped green onions and cilantro if you’d like.

Notes

This chili stores well in the refrigerator for 3-4 days and can be frozen for up to 3 months.
