- 8 corn or flour tortillas
- 1 onion, diced
- 1 bell pepper, diced
- 1 cup spinach (optional)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tsp cumin
- 1 tsp garlic powder
- Salt, to taste
- 2 tbsp olive oil
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, sautéing until they soften.
- Add the chicken, seasoning with salt, cumin, and garlic powder, and cook until no longer pink.
- Pour in the salsa verde and stir; let simmer for a few minutes to meld flavors.
- Layer in a baking dish: start with tortillas, followed by the chicken mixture, and sprinkle cheese. Repeat layers, finishing with cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
For extra flavor, marinate the chicken in salsa verde before cooking. Allow the casserole to sit for 10 minutes after baking for easier serving.
