Ingredients

  • 1 lb skinless, boneless chicken breasts or thighs
  • 1 cup salsa verde
  • 8 corn or flour tortillas
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup spinach (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt, to taste
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, sautéing until they soften.
  3. Add the chicken, seasoning with salt, cumin, and garlic powder, and cook until no longer pink.
  4. Pour in the salsa verde and stir; let simmer for a few minutes to meld flavors.
  5. Layer in a baking dish: start with tortillas, followed by the chicken mixture, and sprinkle cheese. Repeat layers, finishing with cheese.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.

Notes

For extra flavor, marinate the chicken in salsa verde before cooking. Allow the casserole to sit for 10 minutes after baking for easier serving.
