- 1 Strawberry Cake Mix (15 oz)
- 1 1/2 cups Guava Nectar or Guava Juice
- 3 eggs (room temperature)
- 1/3 cup Coconut Oil (liquid)
- 10 oz Cream Cheese (room temperature)
- 1/2 cup granulated sugar
- 1 teaspoon Vanilla extract
- 8 oz Cool Whip (thawed)
- 2 1/2 cups Guava Nectar or Guava Juice (Pink is better)
- 1/2 cup granulated sugar
- 4 tablespoons Cornstarch
- 3 tablespoons Water
- 4 tablespoons sweetened Coconut Flakes (optional)
Instructions
- Preheat your oven according to the cake mix instructions.
- Combine the strawberry cake mix, guava nectar, eggs, and coconut oil in a large bowl. Mix well until combined.
- Pour the batter into a greased cake pan and bake as directed or until a toothpick comes out clean.
- Beat the cream cheese until smooth in another bowl.
- Add the granulated sugar and vanilla extract, mixing until creamy.
- Fold in the Cool Whip gently until combined. Set aside.
- Combine 2 1/2 cups of guava nectar, 1/2 cup sugar, cornstarch, and water in a saucepan.
- Heat over medium while stirring until the mixture thickens and becomes glossy.
- Remove from heat and let cool slightly.
- Spread the cream cheese mixture on top of the cooled cake.
- Pour the guava glaze over the cream cheese layer.
- Chill in the refrigerator until set. Before serving, sprinkle with coconut flakes if desired.
Notes
Best served chilled with fresh tropical fruits or a scoop of vanilla ice cream.
