Description

A delightful tropical cake featuring strawberry flavor, creamy cream cheese, and a glossy guava glaze.


Ingredients

  • 1 Strawberry Cake Mix (15 oz)
  • 1 1/2 cups Guava Nectar or Guava Juice
  • 3 eggs (room temperature)
  • 1/3 cup Coconut Oil (liquid)
  • 10 oz Cream Cheese (room temperature)
  • 1/2 cup granulated sugar
  • 1 teaspoon Vanilla extract
  • 8 oz Cool Whip (thawed)
  • 2 1/2 cups Guava Nectar or Guava Juice (Pink is better)
  • 1/2 cup granulated sugar
  • 4 tablespoons Cornstarch
  • 3 tablespoons Water
  • 4 tablespoons sweetened Coconut Flakes (optional)

Instructions

  1. Preheat your oven according to the cake mix instructions.
  2. Combine the strawberry cake mix, guava nectar, eggs, and coconut oil in a large bowl. Mix well until combined.
  3. Pour the batter into a greased cake pan and bake as directed or until a toothpick comes out clean.
  4. Beat the cream cheese until smooth in another bowl.
  5. Add the granulated sugar and vanilla extract, mixing until creamy.
  6. Fold in the Cool Whip gently until combined. Set aside.
  7. Combine 2 1/2 cups of guava nectar, 1/2 cup sugar, cornstarch, and water in a saucepan.
  8. Heat over medium while stirring until the mixture thickens and becomes glossy.
  9. Remove from heat and let cool slightly.
  10. Spread the cream cheese mixture on top of the cooled cake.
  11. Pour the guava glaze over the cream cheese layer.
  12. Chill in the refrigerator until set. Before serving, sprinkle with coconut flakes if desired.

Notes

Best served chilled with fresh tropical fruits or a scoop of vanilla ice cream.
