Ingredients

  • 1 cup sugar

  • 1 cup coconut milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. Whisk together the sweet rice flour, baking powder, sugar, and salt until well combined.
  3. Stir together the coconut milk, melted butter, vanilla extract, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing; some lumps are okay.
  5. Spread the batter into the prepared baking dish evenly.
