Description

Experience the comforting flavors of Haitian mac and cheese, featuring creamy Gouda and Parmesan mixed with sautรฉed vegetables for a delightful twist on a classic dish.


Ingredients

  • 8 oz (226 g) pasta (penne or rigatoni)
  • 1/2 tbsp unsalted butter
  • 2 tbsp finely chopped onion
  • 1/3 cup sliced red and yellow bell peppers (or red and green)
  • 1 clove garlic (finely minced)
  • 6 oz (170 g) evaporated milk
  • 1/4 cup (57 g) mayonnaise
  • 3/4 cup (85 g) shredded Gouda cheese (plus extra for topping)
  • 1/4 cup (22 g) grated Parmesan cheese (for topping)
  • Salt and pepper to taste

Instructions

  1. In a medium skillet over medium heat, melt the butter until sizzling. Add the onions and sautรฉ for about 1-2 minutes.
  2. Add the bell peppers, cooking for an additional 3-4 minutes until theyโ€™re tender.
  3. Stir in the minced garlic and sautรฉ for another 1-2 minutes until fragrant. Turn off the heat and set aside.
  4. Preheat your oven to 350ยฐF (175ยฐC) and grease a baking dish with butter.
  5. In a pot of salted water, cook the pasta according to package directions until soft or al dente. Drain and return to the pot.
  6. Add the sautรฉed vegetables, evaporated milk, mayonnaise, Gouda, and Parmesan to the pot. Season with salt and pepper.
  7. Stir until the mixture starts to blend and the cheese begins to melt.
  8. Pour the cheesy pasta mixture into the greased baking dish. Top with more shredded Gouda and Parmesan.
  9. Bake for 20-25 minutes until the cheese is melted and the top is golden. Broil for an additional 2-3 minutes for extra crispiness.
  10. Let the dish rest for about 10 minutes before serving.

Notes

Serve it with a fresh green salad or grilled vegetables. For leftovers, refrigerate in an airtight container for up to 3-4 days.
